Since goin Veg I have had to find a new repertoire of recipes. I found this one online and it was an instant favorite. It is Black Bean and Sweet Potato Enchiladas. I have made it three times and it is Yummo! I use Tofutti Sour Supreme Non-Dairy Sour Cream in my version. I also used store bought enchilada sauce because I am a semi- homemade type of momma. The first time I used hot enchilada sauce and DH said it was too hot. The next time I could only find mild and I thought it was far too wimpy. The third time I used medium and it was just right. The link below gives the recipe and a recipe to make your own enchilada sauce if you have the spare time on your hands. I have also made a similar recipe in the form of a quesadilla. It was equally as yummy. Plus this recipe is a great way to sneak some healthy food into kids. I grew up on spicy foods and like it HOT!- you be the judge when it comes to the enchilada sauce!

While I am not Veg, I do love new recipes...thanks so much! I will have to try it. Though, I too will be buying ech. sauce and not making it from scratch. Thanks again!
