Fantastic Bean Chili

Pam is hosting a Tex-Mex Random Recipe exchange! Here is a great Vegan Tex-Mex recipe for all of you Chili fans!

Fantastic Bean Chili

1 onion, minced
1 clove garlic minced (I grate mine on a micro plane)
1 shallot minced
1 green pepper chopped
1 (15 oz) cans black beans, undrained
1 (15 oz) cans pinto beans, drained
1 (15 oz) kidney beans, drained
1 (14.5 oz) can crushed tomatoes
1 package frozen corn
1 tablespoon chili powder
1 tablespoon Mexican oregano (or regular if that is all you have)
1 tablespoon basil leaves
½ tablespoon cayenne pepper
½ tablespoon Cumin
1 tablespoon red wine vinegar

In a large heavy pot over medium heat, cook onion, shallots, green pepper and garlic until all are soft. Stir in beans, corn, tomatoes, chili powder, cayenne, cumin, oregano, basil and vinegar. Use a potato masher to mash up some of the beans. Reduce heat and simmer! Add whatever beans you like. You can use all black bean or kidney if you wish. Play around with the spices to make it a spicier or milder chili. Just have fun and make it your own!
