A few weeks ago I read an awesome post over at Recycle Your Day on making veggie stock. While I was reading I thought, I am spending enough on organic veggies-I might as well get a second use out of them. So I started saving my scraps in the freezer and on Friday I had my first experience making veggie stock and it was FABULOUS!
I put my veggies in a pot and filled it with water. I also roasted some in the oven to give the stock extra yummy flavor.
It was easy and I ended up with a lot of stock. I put some in the fridge and some in the freezer and now I am set for a while. When I do run out I am sure I will have enough scraps to whip up another batch.

great idea... you can also make stock with chicken bones or meat bones if you have those too. I know you buy free range chicken and spend extra money on that if they have bone use them to make chicken stock
